Pohorska omelette

Ingredients for 1 omelette

Omelette Pastry :2 egg yolks

Filling: 10 dag cranberry conserve (or other fruit)

3 egg whites

1 dl fresh cream (whipped)

5 dag sugar

2 dag sugar

2-3 dag flour

1 dag icing sugar

1 pkt vanilla sugar

2 tablespoons liquour

Whisk the egg whites until firm. Slowly add the sugar and continue to beat well. Gently fold in the egg yolks, vanilla sugar and sifted flour. Grease a pan with some butter and lightly sprinkle with flour. Pour the omelette mixture into the pan and place in the oven to bake. Bake the omelette until golden on top.

While the omelette is still hot, spread on the warm cranberries and fold the omlette in half. Fill the edge of the omelette with the whipped cream (add sugar as desired), and decorate with cranberries. Sprinkle the omelette with the icing sugar (and liquour if desired) and serve.
